Posted on March 10, 2026 by Admin

Here’s a classic Harvard Beets recipe—sweet, tangy, and perfect as a side dish. 🍯

🍴 Harvard Beets Recipe

Ingredients

  • 2 cups cooked or canned sliced beets
  • 3 tbsp butter
  • 3 tbsp brown sugar
  • 2 tbsp vinegar (white or apple cider)
  • 1 tsp cornstarch (optional, for thickening)
  • Salt and pepper to taste

Instructions

  1. Prepare the sauce
    • In a saucepan, melt the butter over medium heat.
    • Stir in brown sugar and vinegar until sugar dissolves.
  2. Add beets
    • Add the cooked or canned beets to the sauce.
    • Stir gently to coat.
  3. Optional thickening
    • If you want a slightly thicker glaze, dissolve cornstarch in 1–2 tbsp cold water and stir into the pan.
    • Cook for 2–3 minutes until the sauce thickens.
  4. Season
    • Add salt and pepper to taste.
  5. Serve
    • Serve warm as a side dish to meat, poultry, or even a holiday meal.

✅ Tip: Harvard Beets taste even better if left to sit for 30 minutes, letting the sweet and tangy flavors meld.

If you want, I can also give you a quick 10-minute version using canned beets that’s just as delicious. Do you want me to share it?
