Here’s a classic Chicken Curry recipe—rich, flavorful, and comforting. You can make it mild or spicy depending on your preference.


Ingredients (Serves 4)

  • 1 lb (450g) chicken pieces (bone-in or boneless)
  • 2 tbsp vegetable oil or ghee
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1-inch piece ginger, minced or grated
  • 2 medium tomatoes, chopped or 1 cup tomato puree
  • 1 tsp turmeric powder
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp chili powder (adjust to taste)
  • 1 tsp garam masala
  • 1 cup coconut milk or plain yogurt
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat the oil:
    • In a large pan, heat oil over medium heat.
    • Add onions and sauté until golden brown.
  2. Add aromatics:
    • Stir in garlic and ginger, cooking 1–2 minutes until fragrant.
  3. Add spices:
    • Mix in turmeric, cumin, coriander, and chili powder. Cook for 1 minute to release aromas.
  4. Cook the chicken:
    • Add chicken pieces and sear for 5–7 minutes until lightly browned.
  5. Add tomatoes and simmer:
    • Add chopped tomatoes or puree and salt.
    • Cook for 5 minutes until tomatoes break down and form a thick sauce.
  6. Add coconut milk or yogurt:
    • Stir in coconut milk or yogurt and bring to a gentle simmer.
    • Cover and cook 15–20 minutes until chicken is cooked through and tender.
  7. Finish with garam masala:
    • Sprinkle garam masala over the curry and stir. Simmer for 2 more minutes.
  8. Serve:
    • Garnish with fresh cilantro.
    • Serve hot with steamed rice, naan, or roti.

  • For extra richness, use bone-in chicken thighs or drumsticks.
  • Adjust spice levels by reducing or increasing chili powder.
  • You can add vegetables like potatoes, peas, or bell peppers for a hearty curry.
