🍲 Braised Beef Short Ribs with Potatoes

🧾 Ingredients

  • 2–2½ lbs Beef short ribs
  • 2 tbsp Olive oil
  • 1 large Onion, chopped
  • 3 cloves Garlic, minced
  • 2 **Carrot**s, sliced
  • 2 cups Beef broth
  • 1 cup Red wine (optional but recommended)
  • 1 tbsp Tomato paste
  • 1 tsp Thyme
  • 1 Bay leaf
  • 4 medium **Potato**es, peeled and cut into chunks
  • Salt and Black pepper to taste
  • Optional garnish: fresh Parsley

👨‍🍳 Instructions

1. Season and sear the ribs
Pat the short ribs dry and season with salt and pepper. Heat olive oil in a large Dutch oven or deep pot over medium-high heat. Sear the ribs on all sides until browned (about 6–8 minutes). Remove and set aside.

2. Cook the vegetables
In the same pot, sauté onion, garlic, and carrots for about 4–5 minutes until softened.

3. Build the braising liquid
Stir in tomato paste and cook for 1 minute. Pour in red wine and scrape the bottom of the pot to release browned bits. Add beef broth, thyme, and bay leaf.

4. Braise the ribs
Return the ribs to the pot. Cover and simmer on low heat (or bake at 325°F / 165°C) for about 1½ hours.

5. Add potatoes
Add the potato chunks, cover again, and cook for another 30–40 minutes until the ribs are tender and the potatoes are soft.

6. Finish and serve
Remove the bay leaf. Taste and adjust seasoning. Garnish with fresh parsley and serve hot.
