Ingredients (Serves 6–8)

  • 3–4 lb Beef Chuck Roast
  • 2 tablespoons Olive Oil
  • 1 large Onion, sliced
  • 3–4 Carrots, cut into chunks
  • 3 Celery Stalks, cut into chunks
  • 4 cloves Garlic, minced
  • 1 cup Beef Broth
  • 1/2 cup Red Wine (optional, can replace with more broth)
  • 2 teaspoons Salt
  • 1 teaspoon Black Pepper
  • 1 teaspoon Thyme (dried or fresh)
  • 2 teaspoons Rosemary, chopped

Instructions

  1. Sear the Roast
    • Heat olive oil in a large skillet over medium-high heat.
    • Season the beef with salt and pepper, then sear on all sides until browned (about 3–4 minutes per side).
    • Transfer to slow cooker.
  2. Prepare Vegetables
    • Place onions, carrots, celery, and garlic in the bottom of the slow cooker or around the roast.
  3. Add Liquid and Herbs
    • Pour in beef broth and red wine.
    • Sprinkle thyme and rosemary over the top.
  4. Slow Cook
    • Cover and cook on LOW for 8–10 hours or HIGH for 4–6 hours until the beef is tender and easily shredded with a fork.
  5. Serve
    • Remove the roast and let it rest for 10 minutes before slicing.
    • Serve with vegetables and a drizzle of the cooking juices. Optional: thicken the juices with a slurry of cornstarch and water to make gravy.

For extra flavor, add 2 tablespoons of Worcestershire sauce to the liquid, or toss in potatoes for a complete one-pot meal.
