🥬 Slow Cooker Spinach and Pasta

Ingredients

  • 2 cups dry Pasta (penne, rotini, or shells work best)
  • 4 cups fresh Spinach (roughly chopped)
  • 2 cups Chicken broth (or vegetable broth for vegetarian)
  • 1 cup Milk or cream
  • 1 cup Cheddar cheese (shredded)
  • ½ cup Parmesan cheese (grated)
  • 1 small onion (chopped)
  • 2 cloves garlic (minced)
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp red pepper flakes (optional for a little heat)

Instructions

1️⃣ Prepare the slow cooker

  1. Spray the inside of your slow cooker with nonstick cooking spray.
  2. Add onion, garlic, chicken broth, and milk.

2️⃣ Add pasta and spinach

  • Stir in dry pasta and half of the spinach. The spinach will wilt down during cooking.

3️⃣ Cook

  • Cover and cook on low for 2–3 hours or on high for 1–1.5 hours.
  • Stir occasionally to prevent the pasta from sticking.

4️⃣ Add cheese and remaining spinach

  • About 15–20 minutes before the end, stir in cheddar, Parmesan, and remaining spinach.
  • Cover and continue cooking until the cheese is melted and the spinach is wilted.

5️⃣ Serve

  • Taste and adjust salt and pepper.
  • Optional: sprinkle extra Parmesan or red pepper flakes on top.

🍽️ Tips

  • For a creamier pasta, add ½ cup more milk or a dollop of cream cheese.
  • Can be made vegetarian by using vegetable broth.
  • Great with grilled chicken or sausage on the side for protein.
