Here’s a delicious way to turn leftover mashed potatoes into something crispy and irresistible—Cheesy Mashed Potato Puffs 🧀🥔


🧀 Cheesy Mashed Potato Puffs

🧾 Ingredients

  • 2 cups mashed potatoes (cooled)
  • 1 cup shredded cheddar cheese
  • ¼ cup grated Parmesan cheese
  • 2 eggs
  • 2 tbsp sour cream or milk
  • 2 tbsp chopped green onions (optional)
  • ½ tsp garlic powder
  • Salt & black pepper (to taste)
  • Butter or oil (for greasing)

🔪 Instructions

1. Prep

  • Preheat oven to 200°C (400°F)
  • Grease a muffin tin or mini muffin tray

2. Mix

In a bowl, combine:

  • Mashed potatoes
  • Cheddar + Parmesan
  • Eggs
  • Sour cream/milk
  • Garlic powder, salt, pepper
  • Green onions

Mix until smooth and well combined


3. Fill

  • Spoon mixture into muffin cups
  • Fill to the top and lightly press down

4. Bake

  • Bake for 20–25 minutes
  • Until tops are golden and edges are crispy

5. Cool & serve

  • Let cool for 5 minutes
  • Remove carefully and serve warm

🍽️ Serve with

  • Sour cream
  • Ketchup or chili sauce
  • Garlic dip

🔥 Tips

  • Use stiff mashed potatoes (not too runny)
  • Add cooked bacon bits for extra flavor
  • Sprinkle extra cheese on top before baking for a crispy crust
