🍝 Italian Drunken Noodles

🧾 Ingredients (2–3 servings)

  • 8 oz (225 g) spaghetti or linguine
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 small onion, thinly sliced
  • 1 bell pepper, sliced
  • 1 small zucchini, sliced (optional)
  • 1/2 tsp red pepper flakes (adjust to taste)
  • 1/2 cup dry white wine (or chicken/vegetable broth)
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup grated Parmesan cheese
  • Salt and black pepper to taste
  • Fresh basil or parsley, chopped

🍴 Instructions

1. Cook the pasta

  • Boil pasta in salted water until al dente, then drain and set aside

2. Sauté vegetables

  • Heat olive oil in a large skillet over medium heat
  • Add garlic and onion, sauté 2–3 minutes until fragrant
  • Add bell pepper and zucchini, cook 3–4 minutes until tender-crisp

3. Deglaze with wine

  • Pour in the white wine (or broth)
  • Let simmer 2–3 minutes to reduce slightly and absorb flavors

4. Combine pasta and sauce

  • Add cooked pasta and cherry tomatoes to the skillet
  • Toss well to coat in the sauce
  • Season with red pepper flakes, salt, and black pepper

5. Finish with cheese and herbs

  • Remove from heat and sprinkle Parmesan
  • Toss gently, then garnish with fresh basil or parsley

6. Serve

  • Plate immediately and enjoy warm

  • For protein, add shrimp, chicken, or Italian sausage while sautéing the vegetables
  • Adjust spice with extra red pepper flakes if you like it hotter
  • Use freshly grated Parmesan for best flavor
