🥘 Smoked Sausage and Potato Bake

🧾 Ingredients (4 servings)

  • 1 lb (450 g) smoked sausage, sliced into ½-inch rounds
  • 4–5 medium potatoes, peeled and diced
  • 1 onion, chopped
  • 1 bell pepper, chopped (optional)
  • 2–3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp paprika
  • ½ tsp dried thyme or rosemary
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese (optional)
  • Fresh parsley for garnish

🍴 Instructions

1. Preheat oven

  • Preheat to 400°F (200°C)

2. Prepare vegetables

  • In a large bowl, toss diced potatoes, onion, bell pepper, and garlic with olive oil, paprika, thyme, salt, and pepper

3. Layer in baking dish

  • Spread the vegetables evenly in a baking dish
  • Top with sliced smoked sausage

4. Bake

  • Cover with foil and bake 25–30 minutes
  • Remove foil and bake an additional 10–15 minutes, or until potatoes are tender and golden

5. Optional: Add cheese

  • Sprinkle shredded cheddar over the top
  • Bake 5 more minutes until melted and bubbly

6. Serve
