Chicken & Marinade:

  • 1 whole chicken (cut into pieces) or 8–10 pieces
  • 2 cups buttermilk (or milk + 1 tbsp vinegar)
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp paprika
  • 1 tsp garlic powder

Coating:

  • 2 cups all-purpose flour
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp paprika
  • 1 tsp cayenne pepper (optional for heat)
  • 1 tsp onion powder

For Frying:

  • Vegetable oil (enough for deep frying)

1. Marinate the chicken

  • In a bowl, mix buttermilk with salt, pepper, paprika, and garlic powder.
  • Add chicken and coat well.
  • Cover and refrigerate for at least 2 hours (overnight is best).

2. Prepare the coating

  • In another bowl, mix flour with all seasoning.

3. Coat the chicken

  • Remove chicken from marinade (don’t shake off too much).
  • Dredge each piece in the flour mixture.
  • Press firmly to create a thick coating.
  • For extra crispiness: dip back into buttermilk, then flour again.

4. Heat oil

  • Heat oil in a deep pan to about 350°F (175°C).

5. Fry

  • Carefully place chicken into hot oil.
  • Fry in batches (don’t overcrowd).
  • Cook for about:
    • 12–15 minutes (smaller pieces)
    • 15–18 minutes (larger pieces)
  • Turn occasionally until golden brown and fully cooked.

6. Drain & rest

  • Place on a wire rack or paper towels.
  • Let rest 5 minutes before serving.

  • Keep oil temperature steady (too low = greasy, too high = burnt outside/raw inside).
  • Use a thermometer if possible.
  • Let coated chicken rest 10 minutes before frying for better crust.
