  • 1/2 cup unsweetened applesauce
  • 3 large eggs
  • 1/4 cup coconut oil, melted
  • 1/4 cup honey or maple syrup (optional, for extra sweetness)
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • Pinch of salt

Optional Cream Cheese Frosting (No Sugar)

  • 8 oz cream cheese, softened
  • 2–3 tbsp powdered erythritol or stevia blend
  • 1 tsp vanilla extract

Instructions

1️⃣ Preheat oven

  • Preheat oven to 350°F (175°C).
  • Grease an 8-inch round cake pan or line with parchment paper.

2️⃣ Mix wet ingredients

  1. In a bowl, whisk together eggs, coconut oil, applesauce, vanilla, and honey.
