🍗 Chicken Meatballs in Creamy Cheese Sauce

🛒 Ingredients (serves 4)

For the meatballs:

  • 1 lb (450g) ground chicken
  • ½ cup breadcrumbs
  • ¼ cup grated Parmesan cheese
  • 1 small onion, finely chopped
  • 1 clove garlic, minced
  • 1 large egg
  • 2 tbsp milk
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ tsp dried oregano or Italian seasoning
  • 1–2 tbsp olive oil (for frying)

For the creamy cheese sauce:

  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1 cup milk
  • ½ cup shredded cheddar cheese (or a mix of cheddar and mozzarella)
  • ¼ tsp garlic powder
  • Salt and pepper to taste
  • Optional: pinch of nutmeg for extra warmth

👩‍🍳 Instructions

1. Make the meatballs

  1. In a bowl, combine ground chicken, breadcrumbs, Parmesan, onion, garlic, egg, milk, salt, pepper, and oregano.
  2. Mix until well combined.
  3. Form into 1–1.5 inch meatballs.

2. Cook the meatballs

  1. Heat olive oil in a large skillet over medium heat.
  2. Add meatballs → cook 5–7 minutes, turning occasionally, until browned on all sides.
  3. Remove meatballs and set aside (they’ll finish cooking in the sauce).

3. Make the creamy cheese sauce

  1. In the same skillet, melt butter over medium heat.
  2. Stir in flour → cook 1 minute to form a roux.
  3. Gradually whisk in milk → cook until slightly thickened.
  4. Add shredded cheese → stir until melted and smooth.
  5. Season with garlic powder, salt, pepper, and optional nutmeg.

4. Combine meatballs and sauce

  1. Return meatballs to the skillet.
  2. Simmer 5–7 minutes until meatballs are cooked through and sauce coats them evenly.

5. Serve

  • Serve over pasta, rice, mashed potatoes, or crusty bread.
  • Garnish with fresh parsley or grated Parmesan.

🔥 Tips for Best Results

  • Use fresh ground chicken for juicier meatballs.
  • Don’t overcrowd the pan when browning → cook in batches if needed.
  • For a lighter version, use low-fat milk and reduced-fat cheese.

If you want, I can also give a baked version of these chicken meatballs in cheese sauce that’s even easier and less hands-on.

Do you want me to make that baked version?
