Here’s a classic Ugly Duckling Cake recipe—an old-fashioned, easy “dump-style” dessert that turns into a rich, layered treat while baking.

Despite the name, it comes out delicious, gooey, and beautiful in its own way.


🍰 Ugly Duckling Cake (Classic Version)

🧾 Ingredients

Bottom layer:

  • 1 can (20 oz / 565 g) crushed pineapple (with juice)
  • 1 box yellow cake mix (dry, not prepared)

Middle layer:

  • 1 cup shredded coconut (optional but traditional)
  • 1 cup chopped nuts (pecans or walnuts)

Top layer:

  • ½ cup (1 stick) unsalted butter, melted
  • 1 cup brown sugar (packed)

🍴 Instructions

1. Preheat oven

  • Set oven to 350°F (175°C)
  • Grease a 9×13-inch baking dish

2. Add pineapple layer

  • Pour crushed pineapple (with juice) evenly into the dish.

3. Add cake mix

  • Sprinkle dry cake mix directly on top of the pineapple.
  • Do NOT stir.

4. Add toppings

  • Sprinkle coconut and chopped nuts evenly over the dry cake mix.

5. Add butter & sugar

  • Drizzle melted butter evenly over the top.
  • Sprinkle brown sugar across the surface.

6. Bake

  • Bake for 45–50 minutes, until golden brown and bubbly.
  • The top will look “messy” while baking—this is normal.

7. Cool & serve

  • Let it cool for 10–15 minutes.
  • Serve warm, ideally with:
    • Vanilla ice cream 🍦
    • Whipped cream
