🥗 Healthy Pickled Beets

🧂 Ingredients

  • 4–5 medium fresh beets
  • 1 cup vinegar (apple cider or white)
  • ½ cup water
  • 2–3 tbsp honey (or a little sugar)
  • 1 tsp salt
  • ½ tsp black peppercorns
  • 2 cloves garlic (optional)
  • ½ tsp mustard seeds (optional)
  • 1 small bay leaf (optional)

🍳 Instructions

1. Cook the beets

  • Wash and trim the beets
  • Boil for 30–40 minutes until fork-tender
  • Let cool, then peel and slice or cube

2. Make the brine

  • In a saucepan, combine:
    • vinegar
    • water
    • honey
    • salt
    • spices
  • Bring to a gentle simmer for 3–5 minutes

3. Pack the jar

  • Place sliced beets into a clean glass jar
  • Add garlic and spices if using

4. Pour & cool

  • Pour hot brine over the beets until fully covered
  • Let cool to room temperature

5. Refrigerate

  • Seal and refrigerate for at least 24 hours
  • Best flavor develops after 2–3 days
