CHICKEN SALAD W CELERY, PINEAPPLE CHUNKS, BLACK GRAPES AND TOASTED WALNUTS

🥗 Chicken Salad with Celery, Pineapple, Grapes & Walnuts

Ingredients:

  • 2 cups cooked chicken (shredded or diced)
  • 1/2 cup celery (finely chopped)
  • 1/2 cup pineapple chunks (drained if canned)
  • 1/2 cup black grapes (halved)
  • 1/3 cup walnuts (lightly toasted, roughly chopped)

Dressing:

  • 1/3 cup mayonnaise (or Greek yogurt for a lighter version)
  • 1–2 tsp lemon juice
  • 1 tsp honey (optional, for extra sweetness balance)
  • Salt & black pepper to taste

Instructions:

  1. Toast walnuts in a dry pan for 2–3 minutes until fragrant, then let them cool.
  2. In a large bowl, combine chicken, celery, pineapple, grapes, and walnuts.
  3. In a small bowl, mix mayo (or yogurt), lemon juice, honey, salt, and pepper.
  4. Pour dressing over the salad and mix until everything is well coated.
  5. Chill for 20–30 minutes for best flavor (optional but recommended).

Serving ideas:

  • In lettuce cups 🥬
  • As a sandwich or wrap 🥪
  • Over toasted bread or crackers
