Karpatka cake

Here’s a classic Polish dessert: Karpatka Cake 🏔️🍰—a light choux pastry cake filled with rich vanilla cream, named after the “Carpathian Mountains” because of its bumpy top.


🍰 Karpatka Cake Recipe

🧾 Ingredients

🥐 Choux pastry layers

  • 1 cup water
  • ½ cup butter
  • 1 cup all-purpose flour
  • 4 eggs
  • Pinch of salt

🍮 Vanilla cream filling

  • 2 cups milk
  • ½ cup sugar
  • 3 tbsp cornstarch
  • 2 egg yolks
  • 1 tsp vanilla extract
  • 2 tbsp butter

🍬 For topping

  • Powdered sugar

👨‍🍳 Instructions

1. Make choux pastry

  • Heat water + butter + salt in a pan until boiling
  • Add flour all at once and stir quickly until dough forms
  • Cook 1–2 minutes, stirring constantly
  • Remove from heat and cool slightly
  • Add eggs one by one, mixing until smooth dough forms

2. Bake the pastry layers

  • Preheat oven to 200°C (390°F)
  • Divide dough into 2 equal parts
  • Spread each onto baking trays (rough, uneven surface is good)
  • Bake for 20–25 minutes until golden and puffed
  • Let cool completely

3. Make vanilla cream

  • Heat milk in a saucepan
  • In a bowl mix sugar, cornstarch, and egg yolks
  • Slowly whisk in warm milk
  • Return to heat and stir until thick
  • Remove from heat, add butter + vanilla
  • Cool completely

4. Assemble cake

  • Place first pastry layer in tray
  • Spread thick vanilla cream evenly
  • Place second pastry layer on top
  • Refrigerate 4–6 hours (or overnight)

5. Finish

  • Dust with powdered sugar before serving
