🧾 Ingredients

Base:

  • 500g ground beef (mince)
  • 1 tbsp oil or butter
  • 1 medium onion (chopped)
  • 2 cloves garlic (minced)
  • 2 medium potatoes (peeled and diced)
  • 1 carrot (diced)
  • 2 cups chicken or beef broth

Creamy mix:

  • 2 cups milk
  • 1 cup heavy cream (or more milk for lighter version)
  • 2 cups shredded cheddar cheese
  • 2 tbsp flour (to thicken)
  • 2 tbsp butter

Seasoning:

  • Salt & black pepper (to taste)
  • 1 tsp paprika (optional)
  • 1 tsp mustard (gives “burger” flavor)
  • ½ tsp chili flakes (optional)

🔪 Instructions

1. Cook the beef

  • Heat oil in a large pot.
  • Add ground beef and cook until browned.
  • Remove excess fat if needed.

2. Add vegetables

  • Add onion and garlic to the beef.
  • Cook until soft and fragrant.
  • Add potatoes and carrots.

3. Simmer

  • Pour in broth.
  • Bring to a boil, then simmer 12–15 minutes until vegetables are tender.

4. Make it creamy

  • In a small pan, melt butter.
  • Stir in flour and cook 1 minute (this makes a roux).
  • Slowly whisk in milk until smooth.

5. Combine

  • Add milk mixture into the soup pot.
  • Stir well and let it thicken slightly.

6. Add cheese

  • Lower heat.
  • Stir in cheddar cheese until melted and smooth.
  • Add cream, mustard, salt, pepper, and paprika.
