Here’s a classic Christmas Peanut Butter Balls recipe—rich, sweet, and perfect for holiday trays. They’re also known as buckeyes when partially dipped.

Ingredients

Filling:

  • 1 cup creamy peanut butter
  • ½ cup unsalted butter, softened
  • 2–2½ cups powdered sugar
  • 1 tsp vanilla extract
  • Pinch of salt

Coating:

  • 200–300 g chocolate chips (semi-sweet or dark)
  • 1 tbsp coconut oil or butter (helps smooth the chocolate)

Instructions

1. Make the filling
In a bowl, mix peanut butter, butter, vanilla, and salt until smooth.
Gradually add powdered sugar until a soft dough forms (not sticky, but moldable).

2. Roll into balls
Shape mixture into small balls (about 1 inch / 2.5 cm).
Place on a tray lined with parchment paper.

3. Chill
Refrigerate for at least 30–60 minutes until firm.

4. Melt chocolate
Melt chocolate chips with coconut oil in short microwave bursts or over a double boiler. Stir until smooth.

5. Dip
Using a toothpick or fork, dip each ball into chocolate, leaving a small “cap” of peanut butter showing (or fully cover if you prefer).

6. Set
Place back on parchment paper and chill until chocolate hardens.


Tips for best results

  • Chill the dough well so dipping is easier
  • Don’t make the balls too big—bite-sized works best
  • Use good-quality chocolate for a smoother coating
  • Add a sprinkle of sea salt on top for extra flavor

Optional variations

  • Add crushed graham crackers for texture
  • Mix in mini chocolate chips inside the filling
  • Use white chocolate drizzle for decoration
  • Make them festive with red & green sprinkles 🎄
