Hearty Beef Stew

Ingredients (Serves 6–8)

  • 2 lbs beef chuck, cut into 1-inch cubes
  • Salt and black pepper, to taste
  • 3 tbsp all-purpose flour
  • 2–3 tbsp olive oil or vegetable oil
  • 1 large onion, diced
  • 3 garlic cloves, minced
  • 4 cups beef broth
  • 1 cup red wine (optional, can substitute more broth)
  • 3 large carrots, sliced into rounds
  • 3 celery stalks, chopped
  • 3–4 medium potatoes, peeled and diced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 2 bay leaves
  • 1 cup frozen peas (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

1. Brown the Beef

  1. Season beef cubes with salt and pepper.
  2. Toss in flour until lightly coated.
  3. Heat oil in a large pot or Dutch oven over medium-high heat.
  4. Brown beef on all sides (do this in batches if needed). Remove and set aside.

2. Sauté Aromatics

  1. In the same pot, sauté onion until translucent.
  2. Add garlic and cook 1 minute more.

3. Deglaze & Simmer

  1. Add wine (if using) and scrape up browned bits from the bottom.
  2. Return beef to the pot, pour in beef broth.
  3. Add thyme, rosemary, and bay leaves.
  4. Bring to a boil, then reduce heat, cover, and simmer 1.5–2 hours until beef is tender.

4. Add Vegetables

  1. Add carrots, celery, and potatoes.
  2. Simmer another 30–40 minutes until vegetables are tender.

5. Finish

  • Add frozen peas in the last 5 minutes.
  • Adjust seasoning with salt and pepper.
  • Remove bay leaves before serving.
  • Garnish with fresh parsley.

Tips

  • For a thicker stew, mix 1–2 tbsp cornstarch with a little water and stir in during the last 5–10 minutes.
  • Leftovers taste even better the next day as flavors meld.
  • Serve with crusty bread or over mashed potatoes.

💡 Optional twist: Add a splash of Worcestershire sauce or a teaspoon of tomato paste for extra depth of flavor.
