Easy Fluffy Pancakes

Ingredients

  • 1½ cups all-purpose flour
  • 3½ tsp baking powder
  • 1 tbsp sugar
  • ¼ tsp salt
  • 1¼ cups milk
  • 1 egg
  • 3 tbsp melted butter (or oil)
  • 1 tsp vanilla (optional)

Instructions

  1. In a bowl, whisk flour, baking powder, sugar, and salt.
  2. In another bowl, whisk milk, egg, melted butter, and vanilla.
  3. Pour wet ingredients into dry and stir just until combined (lumps are good).
  4. Heat a lightly buttered skillet or griddle over medium heat.
  5. Pour about ¼ cup batter per pancake.
  6. Cook until bubbles form and edges look set (about 2–3 minutes).
  7. Flip and cook another 1–2 minutes until golden.
  8. Serve warm with butter and syrup.

Pancake Secrets

  • 🥞 Don’t overmix—this keeps them fluffy
  • 🔥 If browning too fast, lower the heat
  • 🧈 Rest batter 5 minutes for extra lift

Easy Add-Ins

  • Blueberries or chocolate chips (sprinkle on after pouring)

  • Mashed banana in the batter
