Easy Mexican Street Corn (Elote) Recipe

Ingredients (serves 4)

  • 4 ears of corn, husked
  • 3 tbsp mayonnaise
  • 3 tbsp sour cream (or Mexican crema if available)
  • 1/2 cup cotija cheese (crumbled; feta can work)
  • 1 tsp chili powder (adjust to taste)
  • 1/2 tsp smoked paprika (optional)
  • 1 tbsp lime juice
  • Salt, to taste
  • Fresh cilantro, chopped (optional)

Instructions

  1. Grill the corn
    • Preheat grill (or use a grill pan or skillet).
    • Cook corn, turning occasionally, until slightly charred (8–10 minutes).
  2. Prepare the sauce
    • In a small bowl, mix mayonnaise, sour cream, lime juice, chili powder, smoked paprika, and a pinch of salt.
  3. Coat the corn
    • Brush or spread the sauce evenly over the warm corn.
  4. Add cheese & garnish
    • Sprinkle crumbled cotija cheese all over.
    • Optional: garnish with chopped cilantro and extra chili powder.
  5. Serve immediately
    • Squeeze extra lime on top if desired.
