Creamed Peas on Toast

Ingredients (2 servings)

  • 2 cups fresh or frozen peas
  • 1 tbsp unsalted butter
  • 1 tbsp all-purpose flour
  • ½ cup (120 ml) milk
  • Salt and black pepper to taste
  • 1 tsp Dijon mustard (optional, for a little tang)
  • 2–4 slices of bread (your choice: white, whole wheat, or sourdough)
  • Optional garnish: chopped fresh mint or parsley

Instructions

1. Cook the Peas

  1. Boil or steam the peas until tender (about 3–5 minutes if fresh, 5–7 minutes if frozen).
  2. Drain and set aside.

2. Make the Cream Sauce

  1. In a saucepan, melt the butter over medium heat.
  2. Stir in the flour and cook for 1–2 minutes to make a roux.
  3. Gradually whisk in the milk, making sure there are no lumps.
  4. Cook for 3–5 minutes, stirring constantly, until the sauce thickens.

3. Combine Peas and Sauce

  1. Add the cooked peas to the cream sauce.
  2. Stir in salt, pepper, and mustard if using.
  3. Heat for another 1–2 minutes until everything is warmed through.

4. Prepare the Toast

  1. Toast your bread slices until golden and crispy.
  2. Spoon the creamed peas generously over each slice.
  3. Garnish with fresh herbs if desired.

Tips

  • For extra richness, add a splash of cream or grated Parmesan to the sauce.
  • You can lightly smash some peas in the sauce for texture variation.
  • Works well with crusty bread to soak up the creamy sauce.
