Filipino-style Lomi

Here’s a classic Filipino-style Lomi recipe—a thick, savory noodle soup that’s comforting, hearty, and perfect for rainy days or any time you want a filling meal.


Filipino-Style Lomi Recipe

Ingredients (4–6 servings)

Soup Base & Broth:

  • 6 cups chicken or pork broth
  • 1 tbsp vegetable oil
  • 4 cloves garlic, minced
  • 1 medium onion, chopped
  • ½ cup carrots, sliced thinly
  • ½ cup cabbage, chopped
  • 1 cup cooked chicken, pork, or shrimp (optional)
  • 2–3 tbsp soy sauce
  • 1 tbsp fish sauce (patis)
  • Salt and pepper to taste

Noodles & Thickener:

  • 250 g fresh egg noodles (lomi noodles)
  • 3 tbsp cornstarch dissolved in ½ cup water

Toppings (Optional but recommended):

  • Hard-boiled eggs, sliced
  • Chopped green onions
  • Fried garlic bits
  • Fried pork fat or slices (chicharrón)
  • Crushed red pepper or calamansi (Filipino lime)

Instructions

1. Cook the Aromatics

  1. In a large pot, heat oil over medium heat.
  2. Sauté garlic and onion until fragrant.

2. Build the Soup Base

  1. Add the broth, soy sauce, and fish sauce. Bring to a boil.
  2. Add carrots, cabbage, and protein (chicken/pork/shrimp). Simmer until vegetables are tender (~5–7 minutes).

3. Cook the Noodles

  1. Add the egg noodles to the boiling broth. Cook for 3–5 minutes until tender.
  2. Slowly stir in the cornstarch mixture while continuously stirring.
  3. Cook until the soup thickens to a creamy, slightly gooey consistency.

4. Season & Serve

  1. Adjust salt and pepper to taste.
  2. Ladle into bowls and top with optional toppings: hard-boiled eggs, green onions, fried garlic, or pork fat.

Tips

  • Thicker soup: For a more authentic lomi texture, add cornstarch gradually until desired thickness.
  • Protein variation: Use a mix of chicken, pork, and shrimp for extra flavor.
  • Extra flavor: A few drops of calamansi or a dash of vinegar adds a subtle tang that brightens the dish.
  • Storage: Lomi is best eaten immediately; noodles may absorb liquid if stored overnight.

💡 Result: Rich, thick, and flavorful noodle soup with tender vegetables and your choice of protein, a classic Filipino comfort food.

I can also make a “quick lomi hack” version using pre-cooked noodles and fewer ingredients that’s almost as authentic but much faster to prepare.
