- 1 cup frozen peas
- 1 tbsp tomato paste
- 1 tbsp Worcestershire sauce
- 1 tsp fresh or dried thyme
- 1 cup beef or lamb broth
- Salt and pepper, to taste
Instructions
1. Make the Mashed Potatoes
- Boil potatoes in salted water until fork-tender (15–20 minutes).
- Drain and mash with butter, milk, salt, and pepper until smooth.
- Set aside.
2. Prepare the Filling
- Preheat oven to 400°F (200°C).
- Heat olive oil in a large skillet over medium heat.
- Add onion and carrots; cook until softened (5–6 minutes).
- Add garlic and cook 30 seconds.
- Add ground lamb and cook until browned; drain excess fat if needed.
- Stir in tomato paste, Worcestershire sauce, thyme, salt, and pepper.
- Pour in broth and simmer 5–7 minutes until slightly thickened.
- Stir in peas, then remove from heat.
3. Assemble
- Spread meat mixture evenly in a baking dish.
- Spoon mashed potatoes over the top and spread gently.
- Use a fork to create ridges (helps browning).
4. Bake
- Bake uncovered for 25–30 minutes, until bubbling and lightly golden.
- Optional: broil for 2–3 minutes for extra crispy peaks.
