Here’s a classic, chewy Oatmeal Cookies with Nuts or Fruit recipe — soft in the center with lightly crisp edges. You can customize it with raisins, dried cranberries, chopped dates, walnuts, pecans, or even chocolate chips.


🍪 Oatmeal Cookies with Nuts or Fruit

Makes: About 24 cookies

Time: 30 minutes


Ingredients

  • 1 cup (2 sticks) unsalted butter, softened
  • ¾ cup brown sugar (packed)
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon cinnamon (optional but recommended)
  • 3 cups old-fashioned rolled oats
  • 1 cup mix-ins (choose one or combine):
    • Raisins
    • Dried cranberries
    • Chopped walnuts or pecans
    • Chopped dates
    • Chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Cream butter and sugars
    Beat butter, brown sugar, and granulated sugar until light and fluffy (about 2–3 minutes).
  3. Add eggs & vanilla
    Mix in eggs one at a time, then add vanilla.
  4. Combine dry ingredients
    In a separate bowl, whisk flour, baking soda, salt, and cinnamon.
  5. Mix together
    Gradually add dry ingredients to wet mixture.
    Stir in oats and your chosen nuts or fruit.
  6. Scoop & bake
    Drop rounded tablespoons of dough onto baking sheet, spacing about 2 inches apart.
    Bake 10–12 minutes until edges are golden but centers are still soft.
  7. Cool
    Let rest on baking sheet for 5 minutes before transferring to a wire rack.

Tips for Perfect Texture

  • For softer cookies → slightly underbake.
  • For crispier cookies → bake 1–2 minutes longer.
  • Chill dough 30 minutes for thicker cookies.
  • Use old-fashioned oats (not instant) for best texture.
