Ingredients

  • 2 cans (14–15 oz) salmon, drained and flaked (or 1 lb cooked fresh salmon, flaked)
  • 1 cup breadcrumbs (or crushed crackers)
  • ½ cup finely diced onion
  • 1 small bell pepper, finely diced (optional)
  • 2 large eggs
  • 2 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard (optional but adds flavor)
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • ¼ teaspoon black pepper
  • Salt to taste
  • 2–3 tablespoons vegetable oil (for frying)
  • Lemon wedges for serving

Instructions

1️⃣ Prepare the Mixture

  1. In a large bowl, combine:
    • Flaked salmon
    • Breadcrumbs/crackers
    • Onion & bell pepper
    • Eggs
    • Mayonnaise & mustard
    • Garlic powder, paprika, salt, pepper
  2. Mix until combined. The mixture should hold together; add more breadcrumbs if too wet.

2️⃣ Form Patties

  • Shape mixture into 6–8 patties, about 2–3 inches wide and ½ inch thick.

3️⃣ Fry

  1. Heat oil in a large skillet over medium heat.
  2. Fry patties 3–4 minutes per side, until golden brown and heated through.
  3. Transfer to a paper towel-lined plate to drain excess oil.

4️⃣ Serve

  • Serve hot with:
    • Lemon wedges
    • Tartar sauce or remoulade
    • Coleslaw or southern-style greens
    • Cornbread or biscuits

Tips for the Best Patties

  • Use skin-on canned salmon for extra flavor (just remove larger bones if desired).
  • Don’t overcrowd the pan — fry in batches for a crispier crust.
  • Chill patties 15–20 minutes before frying to help them hold together.
