🥔🌱 Green Beans and Potatoes

Serves: 4

Cook Time: 25–30 minutes


Ingredients

  • 1 lb fresh green beans, trimmed
  • 3–4 medium potatoes, peeled (optional) and cubed
  • 1 small onion, chopped
  • 2–3 cloves garlic, minced
  • 2 tbsp olive oil or butter
  • 1½ cups chicken broth (or vegetable broth)
  • Salt and black pepper to taste
  • Optional: ½ tsp red pepper flakes
  • Optional: 3–4 slices bacon, chopped

Instructions

1️⃣ Prep

  • Trim green beans.
  • Cut potatoes into bite-sized cubes (similar size for even cooking).

2️⃣ Sauté (Adds Flavor)

In a large pot or skillet:

  • Heat oil or butter over medium heat.
  • If using bacon, cook first until crispy, then remove (leave a little fat).
  • Add onion and cook 3–4 minutes until soft.
  • Add garlic and cook 30 seconds.

3️⃣ Simmer

  • Add potatoes and broth.
  • Bring to a gentle boil.
  • Cover and cook 10 minutes.
  • Add green beans.
  • Cover and simmer another 10–15 minutes until potatoes are fork-tender and beans are soft.

4️⃣ Finish

  • Season with salt and pepper.
  • Stir bacon back in (if using).
  • Simmer uncovered a few minutes if you want less liquid.

🍽️ Serving Ideas

  • Serve with roasted chicken
  • Pair with pork chops
  • Add smoked sausage for a one-pot meal

💡 Southern-Style Variation

Add:

  • 1 smoked ham hock or smoked turkey leg
  • Simmer low and slow for 45–60 minutes for deep flavor
