Healthy Pickled Beets

Ingredients (makes ~4 cups):

  • 4–5 medium beets, washed and trimmed
  • 1 cup apple cider vinegar
  • 1 cup water
  • 2–3 tbsp honey or maple syrup (adjust to taste)
  • 1 tsp salt
  • 1–2 cloves garlic, peeled and smashed
  • 1 tsp whole black peppercorns
  • Optional: 1–2 sprigs of fresh thyme or dill

Instructions:

  1. Cook the beets
    • Boil or steam beets until tender (about 30–40 minutes).
    • Let them cool, then peel and slice into rounds or wedges.
  2. Prepare the brine
    • In a saucepan, combine vinegar, water, honey, and salt.
    • Bring to a gentle simmer, stirring until honey and salt dissolve.
    • Add garlic, peppercorns, and herbs.
  3. Pickle the beets
    • Place sliced beets in a clean jar.
    • Pour the warm brine over the beets, making sure they are fully submerged.
  4. Cool and refrigerate
    • Let the jar cool to room temperature, then cover and refrigerate.
    • Beets are ready to eat in 24 hours, but flavor improves after 2–3 days.
    • Keeps in the fridge for up to 2–3 weeks.

  • Skip sugar entirely and rely on the natural sweetness of beets if you prefer a lower-sugar version.
