Here’s a cozy, no-fuss slow cooker potato dish that turns simple baby potatoes into a rich, comforting side (or light main).

🥔 Slow Cooker Herb Butter Baby Potatoes

🛒 Ingredients

  • 2 lbs baby potatoes (washed, halved if large)
  • 3 tbsp melted butter (or olive oil)
  • 3 cloves garlic, minced
  • 1 tsp dried thyme (or Italian seasoning)
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup chicken or vegetable broth

🥣 The “1 Mixture”

In a small bowl, mix:

  • Melted butter
  • Garlic
  • Thyme
  • Salt
  • Pepper
  • Broth

Stir well.

🔥 How to Cook

  1. Place baby potatoes into the slow cooker.
  2. Drizzle the entire butter-herb mixture over the potatoes.
  3. Toss gently to coat.
  4. Cover and cook:
    • Low: 4–5 hours
    • High: 2–3 hours

Potatoes are done when fork-tender.

✨ Optional Finish

  • Sprinkle with fresh parsley
  • Add grated parmesan
  • Squeeze fresh lemon juice for brightness

💡 Make It a Heartier Dinner

Add one of these before cooking:

  • Chicken thighs
  • Smoked sausage slices
  • Green beans or carrots

Everything cooks together beautifully.

If you’d like, I can give you a creamy ranch version or a crispy garlic butter finish trick that makes them taste oven-roasted even from a slow cooker.
