🐢 Pecan & Caramel Turtle Candies

🛒 Ingredients (Makes about 20–24 turtles)

  • 2 cups pecan halves
  • 20–24 soft caramels (store-bought or homemade)
  • 1 tbsp heavy cream (if melting caramels)
  • 2 cups semi-sweet chocolate chips (or milk chocolate)
  • 1 tsp coconut oil or butter (optional, for smooth melting)
  • Pinch of flaky sea salt (optional but amazing)

🔥 Instructions

1️⃣ Toast the Pecans (Important!)

  • Preheat oven to 350°F (175°C).
  • Spread pecans on a baking sheet.
  • Toast for 5–7 minutes until fragrant.
  • Let cool.

Toasting deepens flavor and keeps them crisp.


2️⃣ Form the “Turtle” Base

  • Line a baking sheet with parchment paper.
  • Arrange pecans in clusters of 3–4 halves (like little star shapes).

3️⃣ Melt the Caramel

If using wrapped caramels:

  • Place in a microwave-safe bowl.
  • Add 1 tbsp heavy cream.
  • Microwave in 20-second intervals, stirring until smooth.

Spoon about 1 tablespoon of caramel onto each pecan cluster.

Let set 10–15 minutes (you can chill briefly to speed this up).


4️⃣ Melt the Chocolate

  • Melt chocolate chips with coconut oil in microwave (20–30 sec intervals) or over a double boiler.
  • Stir until smooth.

Spoon chocolate over each caramel mound, covering completely.


5️⃣ Finish

  • Sprinkle lightly with flaky sea salt (optional).
  • Let set at room temperature or refrigerate until firm.

🍬 Storage

  • Store in airtight container.
  • Keep at room temperature for 3–4 days.
  • Refrigerate up to 2 weeks.

✔ Use high-quality chocolate — it makes a big difference.
✔ Don’t overheat caramel or it becomes too hard.
✔ For cleaner bottoms, dip the whole turtle in chocolate instead of spooning on top.
