🧅🔥 Firecracker Bacon Cheddar Cheeseburger Stuffed Onion Bombs

Ingredients (Serves 4–6)

For the Onion Bombs

  • 4 large onions (yellow or sweet)
  • 1 lb ground beef
  • 6 slices bacon, cooked and crumbled
  • 1 cup shredded cheddar cheese
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • 2–3 tbsp breadcrumbs (optional, for binding)
  • 1–2 tbsp chopped fresh parsley (optional)

For the Firecracker Sauce

  • ¼ cup mayonnaise
  • 2 tbsp sriracha (or more, to taste)
  • 1 tsp smoked paprika
  • 1 tsp lime or lemon juice

Optional

  • Toothpicks or skewers to hold onions together
  • Olive oil for drizzling

Instructions

1️⃣ Prepare the Onions

  1. Preheat oven to 375°F (190°C).
  2. Peel onions and slice off the tops; hollow out the centers, leaving a ½-inch thick shell. Reserve onion layers for mixing with the filling if desired.
  3. Optional: lightly brush the outside of onions with olive oil.

2️⃣ Make the Filling

  1. In a bowl, combine ground beef, crumbled bacon, cheddar cheese, garlic powder, smoked paprika, salt, pepper, and breadcrumbs if using.
  2. Optionally, chop reserved onion pieces and mix into the filling for extra flavor and moisture.

3️⃣ Stuff the Onions

  • Fill each hollowed-out onion with the cheeseburger mixture, mounding slightly on top.
  • Secure with toothpicks if needed.

4️⃣ Bake

  1. Place stuffed onions in a greased baking dish.
  2. Cover loosely with foil and bake 35–40 minutes until beef is cooked through and onions are tender.
  3. Remove foil for the last 10 minutes to brown the tops and crisp the cheese.

5️⃣ Make the Firecracker Sauce

  • In a small bowl, whisk together mayonnaise, sriracha, smoked paprika, and lime juice.
  • Adjust spice level to taste.

6️⃣ Serve

  • Drizzle firecracker sauce over the hot stuffed onion bombs.
  • Garnish with chopped parsley or extra crumbled bacon.
  • Serve immediately as an appetizer or hearty side dish.

✨ Tips

  • Extra cheesy: Mix some cheese inside the beef filling and sprinkle extra on top before baking.
  • Make ahead: Stuff onions and refrigerate for up to a day; bake just before serving.
  • Spice control: Adjust sriracha and smoked paprika according to your heat preference.

If you want, I can also give a grill version of these Firecracker Onion Bombs where the onions get smoky flavor while the cheese melts perfectly — great for backyard cookouts.
