  • 3 tbsp ketchup
  • 1 tbsp soy sauce

For stir-fry veggies:

  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 small onion, chopped
  • 1 cup pineapple chunks (fresh or canned)

1. Prepare the chicken

  1. Toss chicken pieces in cornstarch, salt, and pepper until coated.
  2. Heat oil in a skillet or wok over medium-high heat. Fry chicken until golden and cooked through, ~5–7 minutes. Remove and set aside.

2. Cook the vegetables

  1. In the same skillet, sauté onion and bell peppers for 2–3 minutes until slightly tender.
  2. Add pineapple chunks and stir to combine.

3. Make the sauce

  1. In a small bowl, mix pineapple juice, vinegar, brown sugar, ketchup, and soy sauce.
  2. Pour into the skillet with veggies, and bring to a gentle simmer.
  3. Stir in cornstarch slurry and cook until the sauce thickens (~1–2 minutes).

4. Combine

  • Add the fried chicken back into the skillet and toss to coat evenly in the sauce.
