🧀 Cheesy Mashed Potato Muffins

🛒 Ingredients

  • 3 cups mashed potatoes (cold leftovers work best)
  • 1 cup shredded cheddar cheese (or cheese blend)
  • 2 large eggs
  • ¼ cup milk
  • 2–3 tbsp melted butter
  • ¼ cup chopped green onions (optional)
  • ½ tsp garlic powder
  • Salt & pepper to taste

Optional add-ins:

  • Cooked bacon bits
  • Sour cream (2 tbsp for extra creaminess)
  • Chopped parsley

👩‍🍳 Instructions

1️⃣ Preheat oven to 375°F (190°C).
Grease a 12-cup muffin tin well (or use silicone liners).

2️⃣ Mix ingredients:
In a large bowl, combine mashed potatoes, cheese, eggs, milk, butter, seasonings, and any add-ins. Stir until fully combined.

3️⃣ Fill muffin tin:
Spoon mixture evenly into muffin cups, filling almost to the top.
Sprinkle a little extra cheese on top if desired.

4️⃣ Bake:
Bake for 25–30 minutes, or until the tops are golden and slightly crispy around the edges.

5️⃣ Cool slightly:
Let sit 5 minutes before removing. Run a knife around edges if needed.
