🫑 Cheesy Ground Beef Stuffed Bell Peppers

🛒 Ingredients (Serves 4)

  • 4 large bell peppers (any color), tops cut off and seeds removed
  • 1 lb (450 g) ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup cooked rice (white, brown, or cauliflower rice)
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 tsp Italian seasoning
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 cup shredded cheddar or mozzarella cheese (plus extra for topping)
  • 2 tbsp olive oil

Optional: chopped parsley or green onions for garnish


👩‍🍳 Instructions

1️⃣ Preheat oven

  • 375°F (190°C).
  • Lightly grease a 9×13-inch baking dish.

2️⃣ Prepare the peppers

  • Cut tops off bell peppers and remove seeds.
  • Optional: blanch in boiling water 2–3 minutes to soften slightly.

3️⃣ Cook the filling

  • In a skillet, heat olive oil over medium heat.
  • Sauté onion until translucent, 3–4 minutes.
  • Add garlic and cook 30 seconds.
  • Add ground beef, breaking it up, and cook until browned.
  • Stir in cooked rice, diced tomatoes, Italian seasoning, salt, and pepper.
  • Remove from heat and stir in 1 cup shredded cheese.

4️⃣ Stuff the peppers

  • Spoon the beef and cheese mixture into each bell pepper, packing gently.
  • Top with extra cheese if desired.

5️⃣ Bake

  • Place stuffed peppers upright in the baking dish.
  • Add ¼ cup water to the bottom of the dish (keeps peppers moist).
  • Cover with foil and bake 25 minutes.
  • Remove foil and bake another 10–15 minutes until cheese is melted and bubbly.

6️⃣ Serve

  • Garnish with chopped parsley or green onions.
  • Serve hot with a side salad or garlic bread.

  • For extra flavor, add 1 tsp Worcestershire sauce or ½ tsp smoked paprika to the beef mixture.
  • Make ahead: assemble peppers and refrigerate for up to 24 hours before baking.
  • Low-carb version: skip the rice or use cauliflower rice.
