Here’s a rich, pub-style classic — juicy brats simmered in beer, then finished in the oven with sweet caramelized onions 🍺🌭


🍺 Oven-Braised Beer Brats with Caramelized Onions

🛒 Ingredients (Serves 4–6)

  • 6 fresh bratwurst sausages
  • 2 large yellow onions, thinly sliced
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 (12 oz) bottle lager or pilsner beer
  • 1 tbsp brown sugar (optional, helps caramelize)
  • 1 tsp Dijon mustard
  • Salt & black pepper, to taste
  • ½ tsp caraway seeds (optional)
  • Fresh parsley (optional garnish)

🔥 Instructions

1️⃣ Caramelize the Onions

  1. Preheat oven to 350°F (175°C).
  2. In an oven-safe skillet or Dutch oven, melt butter with olive oil over medium heat.
  3. Add onions and a pinch of salt. Cook 15–20 minutes, stirring occasionally, until soft and golden.
  4. Stir in brown sugar (optional) and cook 5 more minutes until deeply caramelized.
  5. Add garlic and cook 30 seconds.

2️⃣ Brown the Brats

  • Push onions to the side and add brats to the pan.
  • Brown on all sides (about 5–7 minutes total).
    They don’t need to cook through yet.

3️⃣ Add Beer & Bake

  1. Pour beer into the skillet (it should mostly cover the brats).
  2. Stir in Dijon and caraway seeds if using.
  3. Bring to a gentle simmer on the stovetop.
  4. Transfer uncovered to the oven.
  5. Bake 20–25 minutes, until brats reach 160°F (71°C) internally.

4️⃣ Optional Finish

For extra browning:

  • Switch oven to broil for 2–3 minutes at the end.

🍽️ Serve With

  • Toasted brat buns
  • Whole-grain mustard
  • Sauerkraut
  • Roasted potatoes or potato salad

💡 Tips

  • Use a malty lager for richer flavor; avoid very bitter IPAs.
  • You can substitute beef broth for beer if preferred.
  • Leftovers reheat beautifully the next day.
