Ingredients (Serves 4–6)

  • 1 lb (450 g) boneless, skinless chicken breasts or thighs, diced
  • 2 tbsp olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1–2 jalapeños, diced (adjust for heat)
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 1 tsp dried oregano

  • 3 cups chicken broth
  • 2 cans (15 oz each) white beans, drained and rinsed
  • 1 can (4 oz) diced green chilies
  • 1/2 cup corn (optional)
  • 1/2 cup heavy cream or half-and-half
  • Salt and black pepper to taste
  • Fresh cilantro or green onions for garnish

Instructions

  1. Cook the chicken
    • Heat olive oil in a large pot over medium heat.
    • Season diced chicken lightly with salt and pepper.
    • Brown chicken 3–4 minutes, then remove and set aside.
  2. Sauté vegetables
    • In the same pot, sauté onion, garlic, and jalapeños until softened (3–5 minutes).
  3. Add spices
    • Stir in smoked paprika, cumin, oregano, Cajun seasoning, and cayenne. Cook 1 minute until fragrant.
  4. Simmer chili
    • Add chicken back to the pot.
    • Pour in chicken broth, white beans, green chilies, and corn (if using).
    • Bring to a simmer, cover, and cook 20 minutes, stirring occasionally.
  5. Finish with cream
    • Reduce heat to low and stir in heavy cream or half-and-half.
    • Taste and adjust seasoning with salt, pepper, or extra Cajun spice.
  6. Serve
    • Garnish with chopped cilantro or green onions.
    • Optional toppings: shredded cheese, avocado slices, or sour cream.

Tips

  • For more heat: Add extra jalapeños or a pinch of crushed red pepper.
  • Make ahead: Chili tastes even better the next day — flavors deepen.
  • Slow cooker option: Combine all ingredients (except cream) and cook on low 4–6 hours; stir in cream before serving.
