Classic Crumb Cake (Buttery Streusel Topping)

A soft vanilla cake topped with a thick, buttery crumb layer—perfect with coffee or tea. 🍰☕

Ingredients

For the Crumb Topping

  • 1 cup Brown Sugar
  • 1 cup All-purpose Flour
  • 1 teaspoon Cinnamon
  • ½ cup melted Butter

For the Cake

  • 1½ cups All-purpose Flour
  • ½ cup Granulated Sugar
  • ½ cup softened Butter
  • 1 cup Milk
  • 1 large Egg
  • 2 teaspoons Baking Powder
  • 1 teaspoon Vanilla Extract
  • ¼ teaspoon salt

Instructions

  1. Preheat the oven
    Set oven to 350°F (175°C). Grease an 8×8-inch baking pan.
  2. Make the crumb topping
    In a bowl, mix brown sugar, flour, and cinnamon.
    Pour in melted butter and stir until large crumbs form.
  3. Prepare the cake batter
    • Cream butter and sugar together until light and fluffy.
    • Beat in the egg and vanilla.
    • In another bowl, mix flour, baking powder, and salt.
    • Add dry ingredients to the batter alternately with milk, mixing until smooth.
  4. Assemble
    Spread the cake batter evenly in the pan.
    Sprinkle the crumb topping generously over the batter.
  5. Bake
    Bake for 35–40 minutes until a toothpick inserted in the center comes out clean.
  6. Cool and serve
    Let it cool slightly, then cut into squares and enjoy.
