Here’s a flavorful and creamy Chicken with Spinach and Mushrooms recipe — a one-skillet meal that’s hearty, healthy-ish, and full of comforting flavors. It pairs well with rice, pasta, or crusty bread.


🍗 Creamy Chicken with Spinach & Mushrooms

🕒 Cook Time: 25–30 minutes

✅ Ingredients:

  • 2 large chicken breasts (or 4 thighs), sliced or pounded thin

  • 2 tbsp olive oil or butter

  • 8 oz (225g) mushrooms, sliced

  • 3–4 cups fresh spinach (or 1/2 cup frozen, thawed & squeezed dry)

  • 3 cloves garlic, minced

  • 1/2 cup chicken broth

  • 1/2 cup heavy cream (or half-and-half)

  • 1/4 cup grated Parmesan cheese

  • Salt & pepper, to taste

  • Optional: 1/2 tsp Italian seasoning or crushed red pepper flakes


🍳 Instructions:

1. Cook the chicken

  • Season chicken with salt, pepper, and (optional) Italian seasoning.

  • Heat 1 tbsp oil in a skillet over medium heat.

  • Cook chicken for 4–5 minutes per side until golden and cooked through.

  • Remove and set aside.

2. Sauté mushrooms

  • In the same skillet, add 1 tbsp oil or butter.

  • Sauté mushrooms for 5–6 minutes until browned.

  • Add garlic and cook for 1 more minute.

3. Deglaze & make the sauce

  • Pour in chicken broth and simmer for 2–3 minutes to deglaze the pan.

  • Add cream and Parmesan cheese. Stir until smooth and slightly thickened.

4. Add spinach

  • Stir in spinach and cook until wilted (1–2 minutes).

5. Combine

  • Return chicken to the skillet and spoon sauce over it.

  • Simmer everything together for 2–3 minutes to heat through.


🍽 Serving Ideas:

  • Over pasta, mashed potatoes, or rice

  • With crusty bread or garlic toast

  • Low-carb? Serve over cauliflower mash or sautéed zucchini

  • Add onion: Sauté with mushrooms for extra depth

  • Make it cheesy: Add more Parmesan or a sprinkle of mozzarella before serving

  • No cream? Use cream cheese or a milk-flour combo as a substitute
