Potato pie filling — nice! Are you thinking about a creamy savory potato filling for a pie (like a comforting mashed potato pie) or something more like a potato and cheese or potato and meat filling?

Here’s a classic savory mashed potato pie filling recipe that works well inside a flaky pie crust or even as a casserole topping:

🥔 Creamy Savory Potato Pie Filling

Ingredients:

  • 4 large potatoes, peeled and diced

  • ½ cup milk or cream (adjust for desired creaminess)

  • 3 tbsp butter

  • 1 small onion, finely chopped (optional)

  • 1 cup shredded cheddar cheese (or your favorite)

  • 2 cloves garlic, minced

  • Salt and pepper, to taste

  • 1 tsp dried thyme or rosemary (optional)

  • 2 tbsp chopped fresh parsley or chives (optional)

Instructions:

  1. Cook Potatoes:

  • Boil potatoes in salted water until very tender (about 15–20 minutes). Drain.

  1. Cook Onion & Garlic (Optional):

  • In a small skillet, sauté onion and garlic in butter until soft and fragrant.

  1. Mash Potatoes:

  • Mash potatoes with butter and milk/cream until smooth and creamy.

  1. Mix:

  • Stir in sautéed onion & garlic, cheese, herbs, salt, and pepper. Adjust seasoning.

  1. Cool Slightly:

  • Let the filling cool a bit before adding to your pie crust.

Tips:

  • Add cooked bacon or ham for a meaty twist.

  • Use sour cream instead of milk for tanginess.

  • For a lighter filling, use Greek yogurt or low-fat milk.
