Ingredients (about 24 balls)

  • 1 cup creamy peanut butter
  • 1 cup powdered sugar
  • ½ cup unsalted butter, softened

  • 1 teaspoon coconut oil or shortening (optional, helps chocolate coating smooth)

Instructions

1. Make the Peanut Butter Filling

  1. In a large bowl, mix together peanut butter, powdered sugar, softened butter, and vanilla extract until smooth and well combined.
  2. Chill the mixture in the fridge for 15–20 minutes so it’s easier to roll.

2. Shape the Balls

  1. Scoop small portions (about 1 tablespoon each) and roll into balls using your hands.
  2. Place them on a parchment-lined baking sheet.
  3. Chill in the fridge for another 15 minutes to firm up.

3. Coat with Chocolate

  1. In a microwave-safe bowl, melt chocolate chips with coconut oil in 30-second intervals, stirring until smooth.
  2. Using a fork or toothpick, dip each peanut butter ball into the melted chocolate, ensuring it’s fully coated.
  3. Place the coated balls back on the parchment paper.

4. Chill to Set

  • Refrigerate for at least 30 minutes, or until the chocolate is firm.
