Country-Fried Steak Recipe

Ingredients

For the Steak

  • 4 beef cube steaks (about ½ inch thick)
  • 1 cup all-purpose flour
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika (optional)
  • ½ tsp garlic powder
  • 2 large eggs
  • ½ cup milk
  • Vegetable oil for frying (enough to cover the bottom of the skillet)

For the Gravy

  • 3 tbsp drippings from frying steak
  • 3 tbsp all-purpose flour
  • 1½ cups milk
  • Salt & black pepper to taste

Instructions

1. Prepare the Breading

  1. In a shallow dish, combine flour, salt, pepper, paprika, and garlic powder.
  2. In another shallow dish, whisk eggs + ½ cup milk.

2. Bread the Steaks

  • Dip each steak in the flour mixture, shaking off excess
  • Then dip in the egg mixture, then back into the flour mixture
  • Press lightly so the coating sticks

3. Fry the Steaks

  1. Heat about ¼ inch vegetable oil in a large skillet over medium heat
  2. Fry steaks 3–4 minutes per side, until golden brown and crispy
  3. Remove and place on a paper towel-lined plate

4. Make the Gravy

  1. Keep 3 tbsp of the pan drippings
  2. Sprinkle in 3 tbsp flour, whisk to form a roux
  3. Slowly whisk in 1½ cups milk
  4. Cook over medium heat, whisking constantly, until thickened
  5. Season with salt & pepper to taste

5. Serve

  • Pour gravy over steaks
  • Serve with mashed potatoes, green beans, or biscuits for a true Southern-style meal

Tips for Success

  • Cube steaks: Tenderize if needed with a meat mallet
  • Oil temperature: Medium heat ensures a crispy crust without burning
  • Gravy: If too thick, add a little extra milk; if too thin, cook a bit longer
