Country-Fried Steak Recipe
Ingredients
For the Steak
- 4 beef cube steaks (about ½ inch thick)
- 1 cup all-purpose flour
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp paprika (optional)
- ½ tsp garlic powder
- 2 large eggs
- ½ cup milk
- Vegetable oil for frying (enough to cover the bottom of the skillet)
For the Gravy
- 3 tbsp drippings from frying steak
- 3 tbsp all-purpose flour
- 1½ cups milk
- Salt & black pepper to taste
Instructions
1. Prepare the Breading
- In a shallow dish, combine flour, salt, pepper, paprika, and garlic powder.
- In another shallow dish, whisk eggs + ½ cup milk.
2. Bread the Steaks
- Dip each steak in the flour mixture, shaking off excess
- Then dip in the egg mixture, then back into the flour mixture
- Press lightly so the coating sticks
3. Fry the Steaks
- Heat about ¼ inch vegetable oil in a large skillet over medium heat
- Fry steaks 3–4 minutes per side, until golden brown and crispy
- Remove and place on a paper towel-lined plate
4. Make the Gravy
- Keep 3 tbsp of the pan drippings
- Sprinkle in 3 tbsp flour, whisk to form a roux
- Slowly whisk in 1½ cups milk
- Cook over medium heat, whisking constantly, until thickened
- Season with salt & pepper to taste
5. Serve
- Pour gravy over steaks
- Serve with mashed potatoes, green beans, or biscuits for a true Southern-style meal
Tips for Success
- Cube steaks: Tenderize if needed with a meat mallet
- Oil temperature: Medium heat ensures a crispy crust without burning
- Gravy: If too thick, add a little extra milk; if too thin, cook a bit longer
If you want, I can also give a shortcut version for the skillet or oven that’s less messy but still golden and crispy.
