Ingredients (Makes 1 loaf)

  • 3 ripe bananas, mashed
  • 1/3 cup melted butter (unsalted)
  • 1/2 cup sugar (can reduce to 1/3 cup if you prefer less sweet)
  • 1 large egg, beaten
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • Pinch of salt
  • 1 1/2 cups all-purpose flour

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
  2. Mix wet ingredients: In a large bowl, mash bananas with a fork. Stir in melted butter, sugar, beaten egg, and vanilla.
  3. Add dry ingredients: Sprinkle in baking soda and salt, then mix in the flour until just combined. Do not overmix.
  4. Add extras: Fold in nuts or chocolate chips if using.
  5. Bake: Pour batter into the prepared loaf pan. Bake 50–60 minutes, or until a toothpick inserted in the center comes out clean.
  6. Cool: Let the bread cool in the pan for 10 minutes, then transfer to a wire rack.

Tips for Perfect Banana Bread

  • Use very ripe bananas (the darker, the sweeter and more flavorful).
  • For extra moisture, you can add 2–3 tablespoons of yogurt or sour cream.
  • Optional spices: 1 tsp cinnamon or a pinch of nutmeg for extra warmth.
