Pork curry

Here’s a rich, comforting Pork Curry recipe with bold flavor and tender meat — perfect with rice or naan.


🍛 Pork Curry (Stovetop Style)

Ingredients

  • 1½ lbs pork shoulder, cut into bite-sized cubes
  • 2 tablespoons oil
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons curry powder (or curry paste)
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • ½ teaspoon turmeric
  • 1 (14 oz) can diced tomatoes
  • 1 cup coconut milk (or plain yogurt for less richness)
  • 1 cup chicken broth (or water)
  • 1–2 potatoes, diced (optional)
  • Salt & black pepper to taste
  • Fresh cilantro for garnish

Optional heat:

  • ½–1 teaspoon chili powder or red pepper flakes

Instructions

  1. Brown the pork
    • Heat oil in a large pot over medium-high heat.
    • Add pork in batches and brown on all sides.
    • Remove and set aside.
  2. Cook aromatics
    • In the same pot, sauté onion 5–7 minutes until soft.
    • Add garlic and ginger; cook 1 minute.
  3. Add spices
    • Stir in curry powder, cumin, coriander, turmeric, and chili powder.
    • Toast 30 seconds until fragrant.
  4. Build the sauce
    • Add diced tomatoes and stir, scraping up browned bits.
    • Return pork to pot.
    • Add coconut milk and broth.
  5. Simmer
    • Bring to a gentle boil, then reduce heat.
    • Cover and simmer 45–60 minutes until pork is tender.
    • Add potatoes during the last 30 minutes if using.
  6. Finish
    • Taste and adjust salt and spice.
    • Garnish with fresh cilantro.

🔥 Slow Cooker Version

  • Brown pork and sauté aromatics first.
  • Transfer everything to slow cooker.
  • Cook on low 6–8 hours or high 3–4 hours.

🍽 Serving Suggestions

  • Steamed jasmine or basmati rice
  • Warm naan or flatbread
  • Side of cucumber yogurt sauce
