Apple Cinnamon Cottage Cheese Mug Cake

Ingredients

  • ½ cup cottage cheese
  • 1 egg
  • 2 tbsp oat flour (or quick oats blended)
  • 1–2 tbsp maple syrup or honey (to taste)
  • ¼ tsp baking powder
  • ½ tsp cinnamon
  • Pinch of salt
  • 2–3 tbsp finely chopped apple (peeled if you want it extra soft)
  • Optional: pinch of nutmeg or vanilla extract

Instructions

  1. Blend for smoothness
    Blend cottage cheese, egg, oat flour, sweetener, baking powder, cinnamon, salt, and vanilla until smooth.
    (No blender? Mash cottage cheese really well—texture will be slightly rustic.)
  2. Fold in apples
    Stir in chopped apple and nutmeg if using.
  3. Microwave
    Pour into a greased microwave-safe mug.
    Microwave 90–120 seconds, checking at 90.
    Center should be just set (it firms up as it cools).
  4. Rest & enjoy
    Let sit 1 minute before digging in.
