Classic Apple Pie Recipe

Ingredients

For the crust (makes 2 crusts):

  • 2½ cups all-purpose flour
  • 1 tsp salt

For the filling:

  • 6–7 medium apples, peeled, cored, and sliced (Granny Smith or Honeycrisp work well)
  • ¾ cup sugar
  • ¼ cup brown sugar
  • 1 tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • 2 tbsp all-purpose flour (to thicken)
  • 1 tsp lemon juice
  • 1 tsp vanilla extract

Optional:

  • 1 egg, beaten (for egg wash)
  • 1 tbsp sugar for sprinkling

Instructions

  1. Make the crust:
    • In a large bowl, mix flour, salt, and sugar.
    • Cut in cold butter until mixture resembles coarse crumbs.
    • Add ice water, 1 tbsp at a time, until dough comes together.
    • Divide into 2 discs, wrap in plastic, and chill at least 1 hour.
  2. Prepare the filling:
    • In a bowl, toss apple slices with sugars, cinnamon, nutmeg, flour, lemon juice, and vanilla.
  3. Assemble the pie:
    • Preheat oven to 425°F (220°C).
    • Roll out one dough disc and place in a 9-inch pie pan.
    • Pour in apple filling.
    • Roll out the second dough disc and cover pie. Trim edges and crimp.
    • Cut small slits in the top for steam to escape.
    • Optional: brush with beaten egg and sprinkle sugar.
  4. Bake:
    • Bake at 425°F (220°C) for 20 minutes.
    • Reduce heat to 375°F (190°C) and bake 35–40 minutes until crust is golden and filling is bubbly.
  5. Cool & Serve:
    • Let pie cool at least 2 hours to set the filling.
    • Serve plain or with vanilla ice cream.
