🥓🥔 Bacon & Sausage-Stuffed Potato Loaf

🧾 Ingredients

For the potato base:

  • 4 large potatoes (boiled & mashed)
  • 2 tbsp butter
  • ½ cup milk or cream
  • Salt & black pepper to taste
  • ½ cup shredded cheese (optional, for creaminess)

For the filling:

  • 200g bacon, cooked and chopped
  • 200g sausage, cooked and crumbled (or sliced)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 tsp paprika or chili flakes (optional)

For assembly:

  • 1 egg (for binding, optional)
  • Extra cheese for topping
  • Butter or oil for greasing

🔥 Instructions

1. Prepare filling

  • In a pan, cook bacon until crispy. Remove and chop.
  • Cook sausage in the same pan until browned.
  • Add onion and garlic, sauté until soft.
  • Mix bacon + sausage together. Set aside.

2. Make mashed potatoes

  • Mash boiled potatoes with butter, milk, salt, pepper, and cheese.
  • Let it cool slightly so it’s easier to shape.

3. Assemble the loaf

  • Preheat oven to 180°C (350°F).
  • Line a loaf pan with baking paper or grease it well.
  • Spread half the mashed potatoes into the base and sides (like a shell).
  • Add the meat filling in the center.
  • Top with remaining mashed potatoes and smooth it out.
  • Sprinkle extra cheese on top.

4. Bake

  • Bake for 25–35 minutes, until golden and slightly crispy on top.

5. Serve

  • Let it rest 5–10 minutes before slicing.
  • Serve warm for best texture.

🍽️ Tips

  • Chill mashed potatoes slightly before assembling for easier shaping
  • Add mozzarella inside for a cheesy pull effect
  • Don’t overfill or the loaf may crack

🔄 Variations

  • Spicy version: Add jalapeños or hot sauce to filling
