Ingredients

  • 4 medium beetroots

    • Fresh thyme or rosemary
    • Crumbled feta or goat cheese (for serving)

Instructions

1. Prep the Beets

  1. Preheat oven to 400°F (200°C).
  2. Wash and scrub beets well.
  3. Peel (optional—skins soften when roasted).
  4. Cut into cubes or wedges.

2. Season

  • Toss beets with olive oil, salt, pepper, and any herbs you like.

3. Roast

  1. Spread beets on a baking sheet in a single layer.
  2. Cover loosely with foil and roast 25 minutes.
  3. Remove foil and roast another 10–15 minutes, until fork-tender and lightly caramelized.

4. Finish & Serve

  • Drizzle with balsamic vinegar or lemon juice.
  • Sprinkle with feta or goat cheese if desired.
  • Serve warm or at room temperature.

Quick Variations

  • Beetroot Salad: Toss roasted beets with arugula, walnuts, and vinaigrette.
  • Garlic Beets: Add minced garlic during the last 10 minutes of roasting.
  • Honey-Roasted: Drizzle with 1 tsp honey before final roast.
