🥦 Cheesy Baked Asparagus Gratin

🛒 Ingredients (Serves 4)

  • 1 lb (450g) fresh asparagus, trimmed
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1 cup (240ml) milk
  • ½ cup heavy cream (optional for extra richness)
  • 1 cup shredded Gruyère, cheddar, or a mix
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp garlic powder (optional)
  • ¼ tsp nutmeg (optional, adds warmth)
  • ¼ cup grated Parmesan for topping
  • ½ cup breadcrumbs (optional for extra crunch)

🔥 Instructions

1️⃣ Preheat & Prep

  • Preheat oven to 375°F (190°C)
  • Lightly grease a baking dish

2️⃣ Blanch the Asparagus

  • Boil water with a pinch of salt
  • Cook asparagus for 2–3 minutes until bright green and slightly tender
  • Drain and plunge into ice water to stop cooking
  • Pat dry

3️⃣ Make Cheese Sauce

  • In a saucepan, melt butter over medium heat
  • Stir in flour and cook 1–2 minutes (roux)
  • Gradually whisk in milk and cream until smooth and thickened
  • Add ¾ cup shredded cheese, salt, pepper, garlic powder, and nutmeg
  • Stir until cheese melts

4️⃣ Assemble Gratin

  • Place asparagus in the baking dish
  • Pour cheese sauce over asparagus
  • Top with remaining cheese, Parmesan, and breadcrumbs

5️⃣ Bake

  • Bake for 20–25 minutes until bubbly and golden
  • Optional: broil 1–2 minutes for extra crusty top

6️⃣ Serve

  • Let rest 5 minutes before serving
  • Perfect with roasted meats, chicken, or as a vegetarian main with a salad

💡 Tips for Best Results

✔ Trim woody ends of asparagus for tenderness
✔ Use a mix of cheeses (Gruyère + Parmesan) for deep flavor
✔ Make ahead: assemble, cover, and refrigerate, then bake before serving

If you want, I can also give a low-carb, keto-friendly version that uses cream cheese and almond flour for the topping — it’s extra indulgent without the breadcrumbs.

Do you want me to share that version?
