Here’s a hearty, flavorful Cheesy Italian Meatloaf recipe — tender, cheesy, and perfect for family dinners 🍝🧀

🍖 Cheesy Italian Meatloaf

🛒 Ingredients (Serves 6–8)

Meatloaf:

  • 2 lbs (900g) ground beef (or half beef, half pork for extra flavor)
  • 1 cup Italian-style breadcrumbs
  • 1 cup shredded mozzarella (plus ¼ cup extra for topping)
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1 large egg
  • ½ cup milk
  • ½ cup grated Parmesan
  • 2 tsp Italian seasoning (or mix of oregano, basil, thyme)
  • 1 tsp salt
  • ½ tsp black pepper
  • ¼ tsp red pepper flakes (optional)

Topping:

  • ½ cup tomato sauce or marinara
  • ¼ cup shredded mozzarella
  • Fresh parsley, chopped (for garnish)

🔥 Instructions

1️⃣ Preheat

  • Preheat oven to 375°F (190°C)
  • Line a loaf pan with parchment paper or lightly grease it

2️⃣ Mix Meatloaf

  • In a large bowl, combine:
    • Ground meat
    • Breadcrumbs
    • Onion, garlic
    • Egg, milk
    • Mozzarella, Parmesan
    • Italian seasoning, salt, pepper, red flakes
  • Mix gently until just combined (don’t overmix — keeps it tender)

3️⃣ Shape & Add Topping

  • Form meat mixture into a loaf shape in the pan
  • Spread tomato sauce evenly on top
  • Sprinkle extra mozzarella over the sauce

4️⃣ Bake

  • Bake 50–60 minutes, or until internal temperature reaches 160°F (71°C)
  • Optional: broil 2–3 minutes at the end to brown the cheese

5️⃣ Rest & Serve

  • Let rest 10 minutes before slicing (keeps it juicy)
  • Garnish with fresh parsley

💡 Tips for Best Results

✔ Use a combination of beef and pork for moistness
✔ Don’t overmix — tender meatloaf depends on gentle handling
✔ Serve with spaghetti, mashed potatoes, or a crisp salad

If you want, I can also give a slow-cooker version that stays extra juicy and melts the cheese throughout — perfect for easy weeknight dinners.

Do you want me to share that slow-cooker version?
