A hearty, cheesy, and creamy casserole that’s perfect for family dinners.


Ingredients

  • 4 Chicken Breast (cooked and diced)
  • 4–5 medium Potatoes (peeled and cubed)
  • 6 slices Bacon (cooked and crumbled)
  • 1 cup shredded Cheddar Cheese
  • ½ cup shredded Mozzarella Cheese (optional for extra gooeyness)
  • ½ cup Sour Cream
  • ½ cup Milk
  • 2 tablespoons Ranch Dressing (or more to taste)
  • 1 teaspoon Garlic Powder
  • Salt and pepper to taste
  • 2 tablespoons chopped Green Onion (optional, for garnish)

Instructions

1. Preheat the oven
Set the oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.

2. Prepare the potatoes

  • Boil potato cubes in salted water for 8–10 minutes until slightly tender but not mushy.
  • Drain and set aside.

3. Mix the creamy sauce
In a bowl, combine sour cream, milk, ranch dressing, garlic powder, salt, and pepper.

4. Assemble the casserole

  • In the baking dish, layer the potatoes, diced chicken, and half the crumbled bacon.
  • Pour the creamy sauce evenly over the top.
  • Sprinkle the cheddar (and mozzarella if using) over everything.

5. Bake

  • Bake uncovered for 25–30 minutes until the cheese is melted and bubbly.
  • Optional: Broil for 2–3 minutes at the end for a golden top.

6. Add finishing touches

  • Sprinkle the remaining bacon and chopped green onions on top before serving.
