Ingredients (Serves 2–3)

  • 10–12 fresh okra pods
  • 1 clove garlic, minced
  • 1 tsp soy sauce
  • 1 tsp rice vinegar
  • 1 tsp sesame oil
  • ½ tsp sugar
  • ½ tsp chili oil or a pinch of red pepper flakes (optional)
  • 1 tsp toasted sesame seeds
  • Salt, to taste

Instructions

1. Prepare the Okra

  1. Wash okra and trim the stems
  2. Boil a pot of water with a pinch of salt
  3. Blanch okra for 2–3 minutes until bright green and slightly tender
  4. Drain and immediately plunge into ice water to stop cooking (keeps color and crunch)
  5. Slice okra into bite-sized pieces

2. Make the Dressing

  • In a small bowl, mix minced garlic, soy sauce, rice vinegar, sesame oil, sugar, and chili oil (if using)

3. Combine

  1. Toss the sliced okra with the dressing
  2. Sprinkle with toasted sesame seeds and optional garnishes
  3. Let sit 5–10 minutes for flavors to meld before serving
